Tacos al Pastor Recipe (Slow Cooker)

Tacos al Pastor (Slow Cooker Receta) - How hot do you like it? It’s really easy to turn up the heat on this recipe/receta, but if your family likes to keep things cool, that’s an option, too.
The pork for tacos al pastor is traditionally cooked on a rotisserie. Pineapple and peppers are also used, giving the meat a sweet-and-spicy flavor. To keep things simple, this recipe uses the slow cooker.
The result may not be traditional, but the fragrant smell will pull your family to the kitchen and have them wondering when dinner will be ready so they can dive in!

Ingredients for Tacos al Pastor Receta:

  • 2 pounds pork loin or boneless roast
  • 1 (7-ounce) can chipotle chiles in adobo sauce (optional; see Note)
  • 1 onion, diced
  • 1 garlic clove, crushed
  • 1 (20-ounce) can pineapple tidbits in juice
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 12 to 16 corn tortillas
  • 2 cups shredded lettuce
  • ½ cup chopped fresh cilantro
  • Lime wedges, for serving

How to Make Tacos al Pastor Slow Cooker:

  1. Place the pork in a slow cooker.
  2. Remove all the chiles from the can of chipotles and set aside. Spoon the sauce from the can into a medium bowl. Add the onion, garlic, pineapple tidbits with their juice, salt, and pepper.
  3. Depending on how spicy you like your tacos, select 1 or 2 of the chipotle chiles (if you’re using them). Slice the chile(s) lengthwise and scrape out the seeds. (The heat is found in the seeds, so removing them makes the chile less spicy.) Dice the chile(s) and add to the bowl with the onion mixture. Stir to combine. Pour the mixture into the slow cooker over the pork. Cover and cook on High for 5 to 6 hours or on Low for 7 to 8 hours. Shred the cooked meat with two forks.
  4. Serve the pork in corn tortillas with lettuce and cilantro, and lime wedges on the side.

Extra chipotle chiles can be frozen for use in another recipe.
