Keto Sweet Cream Truffles Recipe - My brother and I used to make these truffles when we got home from school. Of course, as hungry teenagers, we didn’t stop to mold them into delicate shapes or even cover with chocolate. We just scarfed down the delicious cream and sugar mixture. Your turn to start scarfing!

Ingredients for Sweet Cream Truffles:

  • 2 cups heavy cream
  • ½ cup Swerve confectioners’ sweetener
  • ½ cup sugar-free chocolate chips
  • 1 tablespoon unsalted butter

How to Make Sweet Cream Truffles:

  1. Line a rimmed baking sheet with parchment paper; put aside.
  2. In a medium saucepan, combine the cream and sweetener. Cook over medium heat, stirring frequently, until the mixture turns light brown and thickens slightly, 5 to 6 minutes. Transfer the mixture to a small bowl and chill until firm, about 1 hour.
  3. When the mixture is firm, form it into 12 small balls. Arrange the balls on a plate and chill in the refrigerator while you prepare the coating.
  4. In a small microwave-safe bowl, combine the chocolate chips and butter. Microwave on high for 30 seconds; stir. Let stand for 1 minute and stir again to melt any remaining unmelted chocolate or butter.
  5. Working quickly, spear each sweet cream ball with a fork and dip into the chocolate coating. (You may find it helpful to put the bowl of chocolate in a pan of hot water to keep it liquid—just don’t splash any water into the chocolate or it will seize up!) Place each coated truffle on the prepared pan. Chill in the refrigerator for one to two hours, until firm.
  6. Store the truffles in a tightly sealed container in the refrigerator.
