Strawberries & Cream Ice Cream Bites Recipe - These are little frozen bites of deliciousness. It’s hard to believe you can have strawberry ice cream while on a “diet,” but if you’ve adopted a keto way of living, you know it’s not a diet, just a way of eating. I made these in my truffle mold, so as to exercise some semblance of portion control, but you can also freeze it as ice cream. In that case, you may want to double the recipe (see Variations below).

Strawberries & Cream Ice Cream Bites Recipe

Ingredients for Easy Strawberries & Cream Ice Cream Bites:

  • ½ cup chopped strawberries
  • ⅓ cup Swerve confectioners’ sweetener
  • 2 tablespoons water
  • 1 teaspoon lime juice
  • 4 ounces full-fat cream cheese, softened
  • ½ cup heavy cream

How to Make Homemade Strawberries & Cream Ice Cream Bites:

  1. In large microwave-safe bowl, combine the strawberries, sweetener, and water. Microwave on high, stopping and stirring every 30 seconds for 2 minutes, or until the strawberries are softened.
  2. Add the lime juice, cream cheese, and heavy cream. Beat with an electric mixer on high until well combined. Divide the mixture among 24 cavities of a silicone truffle mold. Freeze for 2 to 3 hours, until firm, before serving.

Variations
Strawberries & Cream Ice Cream
Double the recipe. Transfer the mixture to an ice cream maker and churn for 25 to 30 minutes, until the ice cream is set. At this point, you can serve as a soft-serve ice cream or cure in the freezer for 1 to 2 hours and serve firm. (For this option, let stand at room temperature for 15 minutes before serving.)
Blueberries & Cream Ice Cream Bites
Instead of the strawberries and lime juice, use blueberries and lemon juice.
Raspberries & Cream Ice Cream Bites
Instead of the strawberries and lime juice, use raspberries and add 1 teaspoon almond extract.
