Homemade keto Pancakes with Almond Flour Recipe from Scratch

Ingredients for Keto Pancakes:

  • Keto cooking spray
  • 2 cups superfine blanched almond flour
  • ½ cup superfine coconut flour
  • ⅓ cup Swerve granulated sweetener
  • 2 teaspoons baking powder
  • 10 large eggs
  • ½ cup water
  • 8 tablespoons solid coconut oil or unsalted butter (1 stick), melted
  • 1 tablespoon vanilla extract

How to Make Homemade Pancakes from Scratch:

  1. Grease an electric griddle with cooking spray and preheat to 375°F (or heat 2 tablespoons coconut oil in a large nonstick skillet over medium heat).
  2. In a large bowl, combine the almond flour, coconut flour, sweetener, baking powder, eggs, water, melted coconut oil, and vanilla. Whisk until well combined.
  3. In batches and using ¼ cup of batter per pancake, pour batter onto the griddle. Cook until the surfaces of the pancakes are bubbling, 2 to 3 minutes. Turn and cook on the other sides until cooked through, 1 to 2 minutes. Repeat to cook the remaining batter. Serve warm.
