Easy Old Fashioned Chocolate Pudding Keto Recipe - Maybe I’m slow on the uptake, but it was not immediately obvious to me how to make a chocolate pudding with no flour, no cornstarch no thickener at all, really. It kept me from trying things for a while, until one day I decided to just get in the kitchen and try something (anything!) so I could make some progress. I still can’t believe my first attempt worked. But it did, which is good for all of us.

Easy Old Fashioned Chocolate Pudding Keto Recipe

Ingredients for Best Old Fashioned Chocolate Pudding:

  • 1 cup heavy cream
  • 1 cup unsweetened almond milk
  • ⅓ cup Truvía granulated sweetener
  • ¼ cup unsweetened cocoa powder
  • 1 large egg
  • 1 teaspoon xanthan gum
  • 1 teaspoon vanilla extract
  • Whipped cream, for serving

How to Make Homemade Old Fashioned Chocolate Pudding:

  1. In a medium saucepan, combine the cream, almond milk, sweetener, cocoa powder, egg, and xanthan gum. Whisk until well combined. Cook over medium-low heat, whisking frequently, until the mixture coats the back of a spoon, about 6 to 8 minutes. (You may need to add a little extra xanthan gum to get to this point.) Do not let the mixture come to a rolling boil. You want to cook it gently and slowly.
  2. Remove from the heat and whisk in the vanilla. Transfer to a serving bowl. Cover and chill in the refrigerator until the pudding has set, 2 to 4 hours.
  3. Serve topped with whipped cream.
