Keto Milky Gummy Bears Recipe - Do you have to have the little bear molds for this recipe? You do not. Are they cuter and more delicious when made into little bears? I think so! You can use small candy molds of any sort for this, but if you get the little bear molds, I also provide a regular non-milky gummy bear variation. Note that if you want them chewier, unmold them once they’ve set and let them rest uncovered in the refrigerator for a few hours.

Keto Milky Gummy Bears Recipe

Ingredients for Easy Gummy Bears:

  • ¼ cup cool water
  • 2 (.25-ounce) packets unflavored powdered gelatin (3 tablespoons)
  • 1 (13.5-ounce) can full-fat coconut milk
  • 3 tablespoons Truvía granulated sweetener
  • 2 or 3 drops pandan extract or other extract

How to Make Best Gummy Bears:

  1. Place two 50-cavity silicone gummy bear molds on a large rimmed baking sheet. (If you don’t have gummy bear molds, you can use any type of silicone mold for chocolates that totals about 100 cavities.)
  2. Pour the water into a small bowl. Sprinkle the gelatin over the water. Set aside to allow the gelatin to soften.
  3. Meanwhile, in a small saucepan, combine the coconut milk, sweetener, and pandan extract. Heat over medium-low heat until bubbles start to form around the sides of the pan. Whisk in the softened gelatin. (A flat wire whisk makes this task much easier.)
  4. Use the dropper that came with the gummy bear mold to fill the cavities with the gelatin mixture, taking care to fill the ears as well. Refrigerate the filled molds overnight.
  5. Unmold the bears onto the baking sheet. (At this point, if you would like the bears to be chewier, chill, them in the refrigerator uncovered, for an additional 3 to 4 hours.)
  6. Store the bears in a tightly sealed container in the refrigerator.

Variation
Homemade Gummy Bears
In a small saucepan, combine 1 (1.3-ounce) package sugar-free Jell-O, ¼ teaspoon unflavored gelatin, and ¼ cup water (or use ½ cup water for slightly softer gummy bears). Cook over medium heat, stirring, until the Jell-O and gelatin have dissolved completely. Place a 50-cavity silicone gummy bear mold on a large rimmed baking sheet. (Alternatively, use a 24-cup mini-muffin pan to make gummy cups.) Use the dropper that came with the gummy bear mold to fill the cavities with the gelatin mixture, taking care to fill the ears as well. Refrigerate until set, about 1 hour. (At this point, if you want the gummies to be chewier, unmold the bears or cups and place on a plate. Refrigerate, uncovered, for an additional 1 hour.) Store the gummy bears in a tightly sealed container in the refrigerator.
