Keto Almond Shortbread Recipe

Ingredients for Keto Almond Shortbread:

  • Keto cooking spray
  • 4 tablespoons (½ stick) unsalted butter, softened
  • ½ to ⅔ cup Swerve granulated sweetener
  • 2 teaspoons almond extract
  • 1 cup superfine blanched almond flour

How to Make Keto Almond Shortbread:

  1. Preheat the oven to 350°F. Lightly grease an 8-inch square baking pan with cooking spray; set aside.
  2. In the bowl of a stand mixer fitted with the paddle attachment, combine the butter and sweetener. Beat on medium speed till fluffy, three to four minutes. Add the almond extract and beat until blended, about 30 seconds. Gradually add the almond flour and beat on low until well blended, about 2 minutes.
  3. Transfer the dough to the prepared pan. Pat it lightly to even out the thickness. Bake for 30 minutes, or until the top starts to lightly brown.
  4. Remove the pan from the oven and cut the shortbread into 8 pieces while it is still warm and soft. Cool completely in the pan on a wire rack before serving.
