  • Keto cooking spray
  • 3 large eggs
  • 1 cup superfine almond flour
  • ⅓ cup TruvĂ­a granulated sweetener
  • 1 teaspoon baking powder
  • 1 teaspoon apple pie spice
  • ¼ cup solid coconut oil
  • ½ cup heavy cream
  • 1 cup shredded carrots
  • ½ cup chopped pecans

To Garnish (Optional)
  • Cream Cheese Frosting
  • ¼ cup chopped pecans

How to Make Homemade Carrot Cake:

  1. For the cake: Preheat the oven to 350°F. Grease an 8-inch round cake pan with cooking spray; set aside.
  2. In a large bowl, combine the eggs, almond flour, sweetener, baking powder, apple pie spice, coconut oil, and cream. Beat with an electric mixer on medium till the mixture is soft. Fold in the carrots and pecans.
  3. Pour the batter into the prepared pan. Bake for 30 to 40 minutes, until a knife inserted into the center of the cake comes out clean.
