Easy Keto Sandwich Bread Recipe

Easy Keto Sandwich Bread Recipe - Let me tell you something. It is not easy to make a keto bread, especially one that is not eggy. I tried many, many different varieties before I settled on this. It is best eaten at room temperature, so be patient and try not to scarf it down when it’s still hot. You can use either black chia seeds, which show up in the slices, or white ones, which tend to disappear into the bread. It also makes really good keto French toast the next day.

Ingredients for Easy Keto Sandwich Bread:

  • Keto cooking spray
  • 4 large eggs, lightly beaten
  • 1 cup superfine blanched almond flour
  • ½ cup chia seeds
  • ¼ cup unsweetened almond milk or water

  • ½ teaspoon salt

How to Make Easy Keto Sandwich Bread:

  1. Preheat the oven to 350°F. Grease an 8×4-inch loaf pan with cooking spray; set aside. (Do not use a larger loaf pan or the bread will be very flat.)
  2. In a large bowl, combine the eggs, almond flour, chia seeds, almond milk, melted coconut oil, baking soda, and salt. Stir until well combined and no lumps remain.
  3. Pour the batter into the prepared pan and bake for 30 minutes. Cool the bread in the pan on a wire rack for 10 minutes. Turn the bread out of the pan. Let cool completely before serving.
