Ingredients for Cottage Cheese Pancakes:

  • 3 large eggs
  • ½ cup full-fat cottage cheese
  • ⅓ cup superfine blanched almond flour
  • ¼ cup unsweetened almond milk
  • 2 tablespoons Swerve granulated sweetener
  • ½ teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Solid coconut oil, butter, or nonstick cooking spray

How to Make Cottage Cheese Pancakes:

  1. In a blender, combine the eggs, cottage cheese, almond flour, almond milk, sweetener, vanilla, and baking powder. Blend until the mixture is smooth.
  2. Heat a nonstick skillet over medium-high heat. Add a little coconut oil or butter to the pan (or spray with cooking spray) and heat until the fat is bubbling. In batches and using 2 tablespoons of the batter per pancake, pour the batter into the pan. (This is a very liquid and delicate batter—don’t try to make large pancakes, as they will not flip over easily.) Cook until bubbles appear and then disappear on the tops of the pancakes, 1 to 2 minutes. Gently loosen the pancakes with a spatula and flip. Cook for an additional 30 seconds to 1 minute, until golden brown.
  3. Repeat with the remaining batter. Serve the pancakes hot.
