Chocolate Chip Cookies without Brown Sugar Recipe - Moderation is a term that can be oversimplified; for example, before starting keto, I would buy a box of cookies, and my idea of moderation was to eat only one-third of the box instead of the entire box. As a person who has struggled with overeating, I enjoy making some recipes smaller so that they yield only one or two servings. With this in mind, I created this easy recipe for when you want just one or two cookies, without the temptation of an entire batch.

Ingredients for Easy & Chewy Chocolate Chip Cookies:

  • 1 large egg yolk
  • 1 tablespoon salted butter, melted
  • ¼ teaspoon vanilla extract
  • ⅓ cup blanched almond flour
  • 1 ½ to 2 tablespoons Swerve confectioners’-style sweetener (see notes)
  • ⅛ teaspoon baking powder
  • Pinch of salt
  • 2 tablespoons stevia-sweetened chocolate chips (see notes)

How to Make Homemade Chocolate Chip Cookies:

  1. Preheat the oven to 350°F. Line a small baking sheet with parchment paper.
  2. In a medium-sized mixing bowl, combine the egg yolk, melted butter, and vanilla and stir with a fork until blended. Add the almond flour, sweetener, baking powder, and salt and mix well with a spoon. Fold in the chocolate chips.
  3. Make 2 balls out of the dough and place the balls on the lined baking sheet. Press each ball into a 3-inch circle. Bake for 12 to 14 minutes, until golden brown.
  4. Transfer the cookies to a wire rack to cool for 15 minutes; they will firm up as they cool.

Notes: Use 1 ½ tablespoons of Swerve for semisweet cookies, or 2 tablespoons for sweet cookies. Try them both ways and see which version you like better!
I use Lily’s baking chips.
It is important to press these cookies into shape before baking, as the dough doesn’t expand like typical cookie dough.
