Keto Diet Chia Seed Pudding Recipe

Ingredients for Chia Seed Pudding:

  • 1 cup unsweetened vanilla almond milk
  • 1 ½ tablespoons Swerve confectioners’-style sweetener
  • ¼ cup chia seeds
  • A few fresh blueberries, for topping (optional)

How to Make Chia Seed Pudding:

  1. In a blender, combine the almond milk and sweetener and blend for 1 minute.
  2. Place the chia seeds in a 12-ounce glass, then pour the almond milk mixture over the top.
  3. Stir well, cover with plastic wrap, and refrigerate overnight.
  4. Divide between two bowls or glasses and serve topped with a few blueberries, if desired.

Note: Sometimes the chia seeds settle toward the bottom of the glass. An hour or two before consuming the pudding, stir well to help distribute the chia seeds evenly.
