Keto Buttery Almond Pound Cake Recipe - This recipe makes a much larger cake than my other recipes, so it’s definitely a good party cake since there will be enough to share. As written, the recipe isn’t very sweet. If you want it slightly sweeter, increase the Swerve or Truvía. Be sure to beat the batter well so that you have a good crumb. It does really well when toasted the next day too. Many people in my Facebook group made a lemon pound cake out of this (see Variation below), so feel free to experiment!

Keto Buttery Almond Pound Cake Recipe

Ingredients for Keto Buttery Almond Pound Cake:

For the cake
  • Keto cooking spray
  • 4 ounces full-fat cream cheese, softened
  • 4 tablespoons (½ stick) unsalted butter, softened
  • ¾ cup Swerve granulated sweetener
  • 1 teaspoon almond extract
  • 4 large eggs
  • ¼ cup full-fat sour cream
  • 2 cups superfine blanched almond flour
  • 2 teaspoons baking powder

To garnish (Optional)
  • Mixed fresh berries
  • Whipped cream

How to Make Keto Buttery Almond Pound Cake:

  1. For the cake: Preheat the oven to 350°F. Grease a 6-cup Bundt pan or large loaf pan with cooking spray; set aside.
  2. In the bowl of a stand mixer fitted with the paddle attachment, combine the cream cheese, butter, and sweetener and beat until the mixture is light and fluffy and the ingredients are well blended.
  3. Add the almond extract and mix. Add the eggs and sour cream and mix. Add the almond flour and baking powder and beat until all the ingredients are well blended and the batter is light and fluffy.
  4. Pour the batter into the prepared pan. Bake for forty minutes, or until a toothpick inserted into the center of the cake comes out clean.
  5. Cool within the pan on a wire rack for ten minutes. Remove from the pan and cool fully on the rack. If desired, serve with fresh berries and whipped cream.

Variation
Lemon Pound Cake
Substitute lemon extract for the almond extract and add 1 tablespoon grated lemon zest along with the extract.
