Healthy Banana Ice Cream Recipe - Yeah, we can’t really have bananas and be keto, can we? Using banana extract is a great way to get a hint of the flavor you may be missing, without the carbs. When I first made this ice cream, I just used vanilla extract so think of this as a great base recipe for ice cream and get creative with the flavors.

Ingredients for Vegan Banana Ice Cream:

  • 4 ounces full-fat cream cheese, softened
  • ¼ cup Swerve confectioners’ sweetener
  • 1½ cups heavy cream
  • 1 cup unsweetened almond milk
  • 1 teaspoon banana extract
  • 2 or 3 drops yellow food coloring (optional)

How to Make Homemade Banana Ice Cream:

  1. In a large bowl, combine the cream cheese and sweetener. Beat with an electric mixer on medium until well blended. Gradually add the heavy cream, beating constantly. Beat on medium-high until the mixture is light and fluffy and firm peaks form.
  2. Add the almond milk, banana extract, and food coloring (if using). Stir gently until blended.
  3. Transfer the mixture to an ice cream maker and churn for 25 to 30 minutes, until the ice cream is set. At this point, you can serve it as a soft-serve ice cream or cure it in the freezer for one to two hours to serve firm. (For this option, let it stand at room temperature for 15 minutes before serving.)

Variations
Coconut Ice Cream
Omit the banana extract and food coloring. Add ½ teaspoon coconut extract and ½ cup toasted unsweetened shredded coconut.
Fruit Ice Cream
Omit the banana extract and food coloring. Reduce the almond milk to ½ cup. Add ½ to ¾ cup pure fruit puree. (Be sure to use lower-carb fruits, such as berries.)
Ice Cream Bites
Cut the recipe in half and use a silicone truffle mold or silicone cupcake molds to freeze the mixture in small bite-size chunks.
