Vegan Instant Pot: Green Lentil Sloppy Joes Recipe - These take me right back to summer camp, when the camp counselors made us an easy dinner of Sloppy Joes on kaiser rolls. I’m 100 percent sure they used industrial-sized cans of Manwich, but these days I’m all for packing in lots of vegetables and making a big pot of nourishing lentils instead. Add some whole-wheat buns, sweet onion slices, and pickles and you’ve got a deliciously retro dinner, reinvented for the twenty-first century.

Ingredients for Vegan Instant Pot: Green Lentil Sloppy Joes Recipe:

  • ¼ cup extra-virgin olive oil
  • 1 yellow onion, diced
  • 1 green bell pepper, seeded and diced
  • 1 large carrot, peeled and diced
  • 2 stalks celery, diced
  • 3 cloves garlic minced
  • 1 tablespoon chili powder
  • 1 teaspoon fine sea salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • 2 tablespoons vegan Worcestershire sauce
  • 1 tablespoon cider vinegar
  • 4 cups low-sodium vegetable broth
  • 2¼ cups (1 pound) green lentils, rinsed
  • ¼ cup turbinado or organic cane sugar
  • 1 (15-ounce) can tomato sauce
  • ¼ cup tomato paste
  • 8 whole-wheat hamburger buns, split and toasted
  • 8 sweet yellow onion slices
  • Bread-and-butter pickle slices for serving

Directions for Vegan Instant Pot: Green Lentil Sloppy Joes Recipe:

  1. Select the Sauté setting on the Instant Pot, add the oil, and heat for 2 minutes. Add the onion, bell pepper, carrot, celery, and garlic and sauté for about 10 minutes, until the onion is translucent but not yet beginning to brown. Add the chili powder, salt, pepper, cumin, and smoked paprika, and sauté for 1 minute. Add the Worcestershire, vinegar, broth, and lentils and stir well. Add the sugar, tomato sauce, and tomato paste on top of the other ingredients. Do not stir.
  2. Secure the lid and set the Pressure Release to Sealing. Press the Cancel button to reset the cooking program. Then select the Manual, Pressure Cook, or Bean/Chili setting and set the cooking time for 25 minutes at high pressure. (The pot will take about 10 minutes to come up to pressure before the cooking program begins.)
  3. When the cooking program ends, let the pressure release naturally for at least 10 minutes, then move the Pressure Release to Venting to release any remaining steam. Open the pot and stir to incorporate the tomato paste.
  4. Place the bun bottoms, cut side up, on individual plates and ladle the Sloppy Joe mixture onto the buns. Top with the onions and pickles, close with the bun tops, and serve hot.
