  • ¼ cup extra-virgin vegetable oil, plus more for serving
  • 2 shallots, diced
  • 5 cloves garlic, minced
  • ½ teaspoon red pepper flakes
  • ½ teaspoon ground nutmeg
  • 1 teaspoon fine sea salt, plus more as needed
  • 2 bunches (about 1 pound) lacinato or curly kale, stems discarded and leaves chopped into 1-inch pieces, or one 1 (10-ounce) bag washed and trimmed baby kale, cut into 1-inch pieces
  • 2 large carrots, peeled and diced
  • 2½ cups water
  • 1 cup beluga lentils, rinsed
  • Crusty bread for serving

  1. Select the Sauté setting on the Instant Pot, add the oil, and heat for 1 minute. Add the shallots and garlic and sauté for about 4 minutes, until the shallots soften. Add the red pepper flakes, nutmeg, and salt and sauté for 1 minute more. Stir in the kale and carrots and sauté for about 3 minutes, until the kale fully wilts. Stir in the water and lentils, scraping down the sides of the pot to make sure the lentils are submerged.
  2. Secure the lid and set the Pressure unleash to sealing. Press the Cancel button to reset the cooking program. Then select the Manual, Pressure Cook, or Bean/Chili setting and set the cooking time for 30 minutes at high pressure. (The pot can take concerning ten minutes to return up to pressure before the cooking program begins.)
  3. When the cooking program ends, let the pressure release naturally for 10 minutes, then move the Pressure Release to Venting to release any remaining steam. Open the pot and give the mixture a stir. Taste and regulate the seasoning with salt, if needed.
  4. Ladle the lentils into serving dishes and drizzle with oil. Serve warm, with crusty bread alongside.
