Ingredients for Sweet and Spicy Fried Shrimp:

  • ¼ cup coconut flour
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • 1 large egg
  • 8 large shrimp, peeled and deveined, tails removed
  • ¾ tablespoon coconut oil, for the pan
  • ½ batch Mick’s Spicy Aioli
  • Arugula, for serving
  • Sliced green onions, for garnish (optional)

Directions for Sweet and Spicy Fried Shrimp:

  1. In a small bowl, mix together the coconut flour, garlic powder, and salt.
  2. In a third small bowl, beat the egg.
  3. Dip the shrimp into the beaten egg and then into the coconut flour mixture; press the mixture into both sides of the shrimp to coat.
  4. In a medium-sized skillet over medium-high heat, heat the coconut oil. When hot, add the shrimp and fry for 2 to 4 minutes, flipping once, until the “breading” is golden brown on both sides.
  5. Toss the shrimp in the spicy aioli. Serve over arugula and garnish with green onions, if desired.
