Slow Cooker Carnitas Recipe

Ingredients for Slow Cooker Carnitas:

Carnitas
  • 2 medium onions, chopped, divided
  • 1½ cups chicken broth Juice of 1 lime
  • 1 (4 ½-pound) bone-in pork shoulder, or 1 (3-pound) boneless pork shoulder
  • ½ cup chopped fresh cilantro
  • Salt and pepper

Dry Rub
  • 1 tablespoon garlic powder
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons salt

For Serving
  • 1 to 2 heads butter lettuce, leaves separated
  • 1 avocado, peeled, pitted, and sliced
  • Chopped fresh cilantro
  • Diced red onions
  • 1 lime, cut into wedges

How to Make Slow Cooker Carnitas:

  1. In a slow cooker, combine half of the chopped onions, the chicken broth, and the lime juice.
  2. Rinse the pork shoulder with cold water and pat dry.
  3. In a bowl, combine the dry rub ingredients. Rub the mixture over the entire pork shoulder.
  4. Place the seasoned pork shoulder in the slow cooker on top of the onion mixture. Top with the remaining onions and the cilantro. Cover and cook on low for 8 to 10 hours, until the pork is fully cooked and shreds easily.
  5. Remove the pork from the slow cooker, leaving the juices in the slow cooker. Shred the meat and return it to the pot with the juices; season to taste with salt and pepper, if needed. Cover and place on the keep warm setting for 30 minutes.
  6. Preheat the oven to 400°F. Place the shredded pork on a rimmed baking sheet and bake for 15 to 20 minutes until crisp.
  7. Serve in butter lettuce leaves topped with avocado slices, chopped cilantro, and diced red onions, with the lime wedges on the side.
