Ingredients for Simply Oven Roasted Chicken:

  • 1 (3- to 4-pound) whole chicken
  • ½ yellow onion, halved
  • 2 large cloves garlic, halved
  • 2 to 3 sprigs fresh rosemary
  • ½ cup (1 stick) unsalted butter
  • 1 lemon, quartered
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons garlic powder
  • Salt and pepper

How to Make Simply Oven Roasted Chicken:

  1. Preheat the oven to 350°F. Line a roasting pan or deep baking dish with parchment paper.
  2. Remove and discard the giblet bag from inside of the chicken and rinse the chicken with cold water. Pat dry and place in the lined baking dish.
  3. Stuff the chicken cavity with the onion, garlic, rosemary, butter, and 3 of the lemon quarters. Tuck the wing tips under the breast and tie the legs together with butcher’s twine.
  4. Drizzle the olive oil over the entire chicken and rub it into the skin. Season the outside of the chicken with the garlic powder, generous amounts of salt and pepper, and the juice from the remaining lemon quarter.
  5. Bake for 1 hour 30 minutes, or until the internal temperature of the chicken reaches 165°F. Once fully cooked, baste the chicken with the melted butter and pan drippings, then allow to rest for 10 minutes before slicing and serving.

Note: Leftovers can easily be made into Bacon and Ranch Chicken Salad.
