Keto Chicken and Broccoli Alfredo Casserole Recipe

Ingredients for Keto Chicken and Broccoli Alfredo:

  • 1 tablespoon unsalted butter
  • ½ cup chopped yellow onions
  • 1 clove garlic, pressed
  • 8 ounces white mushrooms, sliced
  • 1 pound boneless , skinless chicken breasts or thighs, cooked and cubed (I use a prepared rotisserie chicken)
  • 2 cups broccoli florets, steamed
  • 1 cup Alfredo sauce, homemade or store-bought
  • ½ cup shaved Parmesan cheese
  • 2 teaspoons chopped fresh parsley, or 1 teaspoon dried parsley (optional)

How to Make Keto Chicken and Broccoli Alfredo:

  1. Melt the butter during a large frypan over medium heat. Add the onions, garlic, and mushrooms and cook until the onions are translucent and the mushrooms are cooked.
  2. Add the chicken, steamed broccoli, and Alfredo sauce. Stir and simmer for 2 to 3 minutes.
  3. Divide among four bowls and serve topped with the shaved Parmesan. Garnish with parsley, if desired.
