Keto Cheese Shell Taco Recipe - Although I love a good taco salad, sometimes you just want the crunch of a taco shell. This easy recipe provides every bit of that crunch you crave, without all the carbs! These shells are fun to make and can even be prepared in the microwave if you don’t feel like heating up the oven; see tips below.

Ingredients for Keto Cheese Shell Taco Recipe:

Cheese Shells (makes 6 large shells)
  • 2 cups shredded cheddar cheese

Taco Filling
  • ½ pound ground beef
  • 1 tablespoon sugar-free taco seasoning, homemade (here) or store-bought
  • ¼ cup water

Topping Suggestions
  • 2 cups shredded lettuce
  • 1 medium tomato, diced
  • 1 avocado, sliced
  • ¾ cup sour cream
  • ⅓ cup chopped yellow onions
  • Fresh cilantro, for garnish (optional)

How to make Keto Cheese Shell Taco Recipe:

  1. Preheat the oven to 375°F. Line 2 baking sheets with parchment paper.
  2. Arrange the shredded cheese into 6 piles on the parchment-lined baking sheet, leaving several inches between piles so the shells don’t run together. Bake for 7 to 10 minutes, until the edges start to brown and the cheese is no longer runny.
  3. Meanwhile, prop up a wooden spoon or two kabob skewers, spaced 1 inch apart, with two cups or cans.
  4. Remove the melted cheese rounds from the oven and, while the cheese is still flexible, use a spatula to transfer the cheese and drape over a wooden spoon handle or skewers. Prop up the wooden spoon or skewers with 2 cups or cans. The shell will harden as it cools. Repeat this process with the remaining shells.
  5. In a medium-sized skillet, brown the ground beef, then drain the fat. Add the taco seasoning and water. Stir well, bring to a simmer, and allow to reduce for 3 to 5 minutes. Remove from the heat.
  6. Fill each cheese shell with meat and the toppings of your choice. Garnish with cilantro, if desired.

Tips: These cheese shells are also great filled with eggs, bacon or sausage, and avocado for breakfast tacos!
The shells can be prepared individually in the microwave. Place ⅓ cup of shredded cheese on a piece of parchment paper and microwave on high for 1 minute, then follow Step 3. Repeat with the remaining cheese.
