Homemade Portobello Margherita Pizza Recipe

Ingredients for Homemade Portobello Margherita Pizza:

  • 4 medium portobello mushroom caps, destemmed
  • Dash of salt
  • ¼ cup no-sugar-added marinara sauce
  • 4 tomato slices
  • 4 ounces fresh mozzarella, cut into 4 slices
  • 4 teaspoons extra-virgin olive oil or avocado oil
  • 2 small cloves or 1 large clove garlic, minced
  • 1 tablespoon chopped fresh basil and/or whole leaves, for garnish

How to Make Homemade Portobello Margherita Pizza:

  1. Preheat the oven to 375°F. Place a wire rack in a rimmed baking sheet (this will keep the mushrooms from sitting in the liquid they release while cooking and getting soggy bottoms as a result).
  2. Set the mushroom caps on top of the wire rack. Place 1 tablespoon of marinara and a slice of tomato in each cap, then a mozzarella slice. Drizzle with olive oil, then top with the minced garlic.
  3. Bake for 15 to 18 minutes, until the cheese is melted and the mushrooms are tender.
  4. Remove from the oven and top with the basil before serving.
