Filet Mignon with Gorgonzola Sauce Recipe - There’s nothing like a perfectly cooked filet mignon. Even if you aren’t generally a big fan of blue cheese (like me), you will love this sauce. If you are looking for an alternative, you can simply top this steak with butter to add more fat and delicious flavor.

Ingredients Filet Mignon with Gorgonzola Sauce:

  • 4 (5-ounce) filet mignons
  • Kosher salt and pepper
  • 2 teaspoons avocado oil
  • Gorgonzola Sauce
  • 2 tablespoons unsalted butter
  • 1 clove garlic, minced
  • ⅓ cup crumbled Gorgonzola cheese
  • ¼ cup finely grated Parmesan cheese
  • ¼ cup heavy whipping cream
  • 1 teaspoon onion powder
  • Salt and pepper, to taste

How to Make Filet Mignon in Oven with Gorgonzola Sauce:

  1. Remove the steaks from the refrigerator and season them generously with kosher salt and pepper. Allow to sit at room temperature for 30 minutes.
  2. Preheat the oven to 450°F.
  3. Pour the avocado oil into a large oven-safe skillet over high heat. When hot, add the steaks and sear for 3 to 4 minutes on each side.
  4. Transfer the skillet to the oven and cook for 4 to 6 minutes for medium-rare steaks, or cook longer if you like your steaks more well-done.
  5. Place the steaks on a plate and allow to rest for 5 minutes before slicing.
  6. While the steaks are resting, make the sauce: In a small saucepan over low heat, combine the butter and garlic. When the butter is melted, add the remaining sauce ingredients. Stir to combine, then raise the heat to medium-high. Allow the sauce to simmer and reduce for 3 to 5 minutes, stirring often, until the desired consistency is achieved. Pour the sauce over the filets and serve.
