  • 2 (6-ounce) chicken breast halves
  • ⅓ cup mayonnaise
  • ⅓ cup golden flaxseed meal
  • 2 tablespoons chopped fresh parsley, plus extra for garnish
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • ½ cup no-sugar-added marinara sauce, warm
  • ½ cup shredded mozzarella cheese
  • 1 batch Zoodles, for serving

How to Make Easy Chicken Parmesan:

  1. Preheat the oven to 350°F. Line a shallow baking dish with parchment paper.
  2. Pound the chicken to a thickness of ½ inch.
  3. In a medium-sized mixing bowl, combine the chicken and mayonnaise and toss to coat evenly.
  4. In a separate bowl, mix together the flaxseed meal, parsley, garlic powder, and Italian seasoning.
  5. Place the mayonnaise-coated chicken in the flaxseed mixture, pressing the mixture onto the chicken to evenly coat all sides.
