Ingredients for Keto Breaded Chicken Tenders:

  • ¼ cup golden flaxseed meal
  • 1 tablespoon fresh parsley, chopped
  • ½ teaspoon garlic powder
  • 1 pound boneless, skinless chicken breasts or tenders
  • ⅓ cup mayonnaise
  • Keto Honey Mustard or ranch dressing, for dipping

How to Make Keto Breaded Chicken Tenders:

  1. Preheat the oven to 350°F. Line a shallow baking dish with parchment paper.
  2. Place the flaxseed meal, parsley, and garlic powder in a medium-sized bowl and mix with a fork.
  3. If using chicken breasts, slice the breasts lengthwise into 1½-inch-thick strips. Place the strips, or tenders, in another medium-sized bowl with the mayonnaise and toss to coat evenly.
  4. Dip the coated chicken strips one at a time into the flaxseed meal mixture, pressing the mixture onto the chicken to coat all sides.
  5. Place the breaded chicken tenders on the lined baking dish and bake for 25 minutes, until the internal temperature of the chicken reaches 165°F.
  6. Serve with honey mustard or ranch for dipping.
